Three provinces of Salento (Brindisi, Lecce, Taranto).
ALTITUDE AND ASPECT
The vineyards are located 45 meters above sea level with north-south exposure.

Tufaceousand limestone rock soil.
TRAINING SYSTEM
Guyot.
HARVEST
The grapes are harvested manually in the first ten days of September.
WINEMAKING METHOD
The grapes -picked very early in the morning until before dawn, about 9am- are taken to the cellar and immediately pressed and fermented by the red wine method at a temperature between 25 to 27° C for about 10 days. After the alcoholic and malolactic fermentations, the wine is aged in stainless steel tanks until the following March, when bottling begins.
SENSORY PROFILE
Deep red colour, pleasant, velvety, full, warm flavour with excellent structure.
RECOMMENDED CELLARING
2 years in bottles lying in cool and in dark.
FOOD PAIRING
Red meats, roasts and aged cheeses.
