PRODUCTION DISTRICT
Grown in the Conegliano Valdobbiadene DOCG zone.
ALTITUDE AND ASPECT
The vineyards face south-east and lie at altitudes of approximately 150 and 250 metres above sea level.
TYPE OF SOIL
Iron-rich morainic soil with marly conglomerate. The term Rive in the local dialect refers to the steep hillsides that characterize the area. The slopes of the hills and their exposure to the currents of cool air that descend from the Treviso Prealps ensure sound grapes, which ripen more rapidly in this mesoclimate, retaining a higher sugar content and excellent acidity.
TRAINING SYSTEM
Vertical trellised with the double-arched cane system.
HARVEST
Grapes are handpicked between the first and second weeks of October.
WINEMAKING METHOD AND REFERMENTATION
The base wine is fermented at a controlled temperature with cultured yeasts and subsequently refermented at a low temperature for approximately 60 days using the Charmat method. The wine remains in the bottle for another month before release.
SENSORY PROFILE
An elegant, harmonious vintage wine, showing a pale straw yellow with greenish highlights, and characterized by a fine, persistent bead. The nose offers notes of spring flowers and fruity hints of apples, pears, and white peaches. On the palate it is dry, with excellent structure, full flavour, and a long, refreshing finish. A very sophisticated Prosecco with an elegant personality for convivial occasions.
RECOMMENDED CELLARING
Up to 18 months in bottle, laid down in a cool, dark place.
FOOD PAIRING
Traditional Veneto dishes: scallops au gratin, radicchio risotto;
all light vegetable, fish, or meat dishes.
