VINIFICATION
Grapes are harvested by hand and turned into must after a few hours from the harvest. The clarified must ferments in stainless steel vats at a controlled temperature of 16°C.
MATURATION AND REFINING
It evolves and matures in stainless steel vats. It refines on the fine lees in “bâtonnage” for about 60 days.
