Enclosed in a rounded bottle, reminiscent of the traditional straw-covered flasks, is a wine with confident character and lingering fruity notes, thanks to lengthy ageing in oak.
PRODUCTION DISTRICT: Grapes from the Tuscan hills, traditionally well-suited thanks to an ideal combination of soil, aspect and climate.
TYPE OF SOIL: Well-aspected, consisting mainly of tuffstone and alberese.
TRAINING SYSTEM: Guyot and spurred cordon.
HARVEST: Grapes harvested by mid-October.
WINEMAKING METHOD: The ripe grapes undergo the red winemaking method with 3–4 days of cold maceration prior to fermenting at a controlled temperature (26–28 °C) with frequent pumping-over.
AGEING NOTE: The ageing takes place in part in barrel, in part in concrete tanks, to enhance roundness and harmony.
SENSORY PROFILE: Glowing ruby red colour. Marked aromas of raspberries and blackberries with hints of Parma violets and irises. Rounded, candid, tangy flavour with a pleasing, very lingering finish on notes of wild berry jam and almonds.
RECOMMENDED CELLARING: 5 years in bottle laid down in a cool, dark place.
FOOD PAIRING: Mixed grilled meats, prized poultry dishes, lamb, goat meat, sheep’s milk cheese.
