Soil: Lowland areas with red earth rich in organic substances.
Winemaking and maturation: Slightly delayed harvest to find a greater concentration of colour and structure, vinification at controlled temperature with a short period on the skins after the end of fermentation. Partially aged in wood.
Sensory analysis: Intense ruby red, with beautiful brightness and structure. Intense nose on blackberry tones, cherries in alcohol, aromatic herbs, red currant flower, fern and a spicy and balsamic air. In the mouth it is soft, structured, juicy, fresh and delicately tannic with a very long persistence.
Serving temperature: 16/18° C.
Food matches: Ham, first courses of pasta with ragù, risotto with porcini mushroom and bacon, lamb and pork, medium aged cheeses.
