Vinification process:
Harvest: By hand Pressing: gentle, followed by immediate chilling to 7-8°C. Maceration: 12 hours on the skins Fermentation: drawing off and fermentation at 15°C in stainless steel fermenters Maturation: part matured in oak with bâttonage, and part Release: 8 months after final blend assembly and bottling.
Wine description:
Appearance: straw yellow with subtle pale green highlights Bouquet: elegant, with classic varietal characteristics, displaying pink grapefruit, pineapple, mint, and yellow pepper, set off by an intriguing hint of tomato leaf. Palate: well structured, complex, with considerable volume and a crisp, energetic acidity; concentrated varietal fruit; markedly lengthy finish.
Serving suggestions: Outstanding as an aperitif, but perfect as well when paired with asparagus, almost any soup, and with marinated fish.
Serve at 12–14°C.
