GRAPE VARIETY: Vermentino
VINEYARD: Roughly 2.5 Ha. Plant layout is
2.50 x 0.80 m with Guyot vine training system
SOIL: Calcareous, mixed with marls, located a
few kilometres from the sea.
HARVEST PERIOD: First ten days of
September
VINIFICATION: Grapes are harvested by
hand and turned into must after a few hours
from the harvest. The clarified must ferments
in stainless steel vats at a controlled
temperature of 16°C
MATURATION AND REFINING: It evolves
and matures in stainless steel vats. It refines
on the fine lees in “bâtonnage” for about 60
days
TASTING NOTES: The colour is bright straw
yellow with a presence of citrine reflections.
Intense and fragrant, it puts together the
essences of Mediterranean gardens: orange
flowers, rosemary, sage and elderberry. The
iodized mineral notes are well combined with
aromas of white and yellow pulp fruits.
Vibrant in acidity, it is soft and alive to the
palate, and has an excellent alcohol balance
FOOD PAIRING: Excellent as an aperitif, it
outstandingly accompanies specialties of
Mediterranean cuisine. Excellent pairing with
first courses of fish, savoury canapés, salads
and grilled vegetables. Excellent with fried
food and shellfish.
