Production District:
Alto Monferrato in the municipality of Alice Bel Colle in the province of Alessandria.
Altitude and Aspect:
360 metres above sea level, south-west aspect.
Type of Soil:
Soils composed of more or less sandy, grey-blue marl with localized sandy conglomerate intercalations.
Training System:
Traditional guyot with fruiting cane of 8–10 buds.
Harvest:
Grapes are harvested from the second ten days of August onwards. Harvesting takes place solely by hand, using 15 kg cases.
Winemaking and Refermentation Method:
The grapes are taken to the cellar and subjected to soft pressing in the shortest possible time. The first-pressing must obtained is carefully clarified by settling and then stored in refrigerated tanks at low temperatures (-2 °C). For bottle fermentation, the wine is transferred to special steel vessels (pressurized vats), where slow temperature-controlled fermentation begins. Once the desired parameters have been achieved, alcoholic fermentation is stopped by means of refrigeration, leaving a natural sugar residue in the final product that balances the alcohol content.

7.50%, 90 g/l.

Monferrato has always been an area where the synergy between nature and the Moscato grape has made it possible to obtain a unique, inimitable product. And it is from here that the Cà Bianca Asti Spumante harks. Thanks to the clayey limestone soils of the area where the estate is located, wines can be obtained with good structure and captivating aromatic nuances.
