WINEMAKING METHOD
The grape varietiesare vinifiedseparately. They are softly crushed with destemmingand the must ischilledimmediately. Careful pressing is followedby slow fermentation at a controlled temperature. The winesmature on the leesuntil they are blendedand bottled.
SENSORY PROFILE
Yellow colour with golden tints; fruity, ripe aroma which makes the bouquet very pleasant from the spring onwards. Body with a full structure and a warmth typical of Sicilian white wines.
RECOMMENDED CELLARING
1 year in the bottle,in a cool, dark place.
FOOD PAIRING
Hors d’oeuvres, delicate first courses, fish and shellfish.
