Lilium Governo all’Uso Toscano Igt was born with the rediscovery of an interesting traditional method based on a slow second fermentation of the drawn-off wine, with dried grapes. This is a richly historical, local practice.
PRODUCTION DISTRICT:
Grapes from the Tuscan hills, traditionally well-suited thanks to an ideal combination of soil, aspect and climate.
TYPE OF SOIL:
Well-aspected, consisting of alberese and galestro, the typical components of the best Tuscan plots.
TRAINING SYSTEM:
Guyot and spurred cordon.
HARVEST:
September to October.
WINEMAKING METHOD:
Some of the grapes are hand-picked and carefully selected before drying in small cases. Meticulous monitoring of the drying phase produces perfectly sound grapes rich in sugars. In the cellar, batches of freshly drawn-off wine are selected to receive the ready-dried grapes. The slow second fermentation represents the rediscovery and celebration of a historical, local practice: Governo all’Uso Toscano. Along with careful monitoring of the temperatures and skilled use of modern winemaking techniques, the method produces a rich, well-structured wine with unique, appealing and appetizing character.
