WINEMAKING METHOD
The ripe grapes are fermented, macerating for about 15 days, at controlled
temperatures of 26–28 °C. Inoculated yeasts and modern fermentation tanks are used
to enhance the unique traits of the varieties used. Alcoholic fermentation is followed by
about 30 days of micro oxygenation. Malolactic fermentation is then started so as to
obtain wines with velvety tannins and intense colour.
SENSORY PROFILE
Deep ruby red colour, Bolla Merlot offers an intense forest fruit aroma and a smooth,
round flavour, with elegant notes of raspberry and ripe blackberry.
