Monica: the lady of the vine in Sardinia, produced in the Le Bombarde edition. this wine is born from an ancient red grape variety, cultivated on deep and moderately calcareous soils: a wine with a pleasant taste, the ideal companion for both white and red roasted, stewed meat dishes.
Vinification and aging: maceration and fermentation last about a week during which 10% of bloodletting is carried out, and 4 pumping over a day for a quarter of an hour each. Aging in cement for 3-4 months follows Residual

Bouquet: intense and persistent with marked notes of red berries and a very light spicy note.
